酱香土豆片

某日领导神神化化(神神叨叨)自己去削了三个长土豆,我问,您老想要怎么做,他说,没想过,你过来了,你做啦,哈哈。他倒是挺会推的,没办法啦,土豆都削好了,做吧,刚好那天的前一天自己也不知发了什么神经,做了一瓶综合味道的红烧酱,把好几种酱混合起来,现在刚好有用处了。做好后真是飘香满屋,久久不能散去,哈哈,要开开油烟机。

主料:长土豆3个、洋葱1/2个、香葱1根、蒜片5块。

调料:综合酱料3大匙。

操作步骤:

一、土豆截面切薄片;

二、洋葱切块,香葱的葱白与葱绿分别斜刀切粒,蒜瓣切片;

三、土豆片煎成金黄色备用;

四、开锅,开大中火,锅热放适量菜油润锅,加入葱白和蒜片,爆香;

五、倒入综合酱3大匙,炒香,加洋葱块,拌炒至刚熟;

六、倒入煎过的土豆块,加热水约1/4杯,快速翻炒均匀翻炒动作要快,汁很快被吸干,尽量翻拌至每片土豆都被裹上汁时,撒上葱花,翻炒几下即可出锅享用。

综合酱汁的做法:

用一干净有盖玻璃瓶,用高度酒在内擦一遍,干爽后在内倒入海鲜酱2大匙、柱侯酱2大匙、甜面酱2大匙、蚝油2大匙、照烧汁2大匙、生抽2大匙二锅头或高度油1大匙,搅拌均匀即可,平时可放在冰箱保存。到做红烧菜时直接下料,不用再调和,菜的味道变得醇厚,酱香味浓郁,做红烧菜特别方便。

 Tips:

不备综合酱汁也不打紧,可以放些以上列出酱料的其中一味或多味,总之就是让土豆上味道罢了。
